  • 1 cup shredded carrots
  • ½ cup grated carrots, squeezed dry
  • 3 eggs, beaten
  • ¼ cup finely chopped celery
  • 2 tablespoons grated onion
  • salt and ground black pepper to taste
  • 2 tablespoons coconut oil
